What is an Aubergine?

It comes from the same family as potatoes, tomatoes and peppers.

The aubergine is also known as an egg plant.

The skin of the fruit should be bright, glossy with a deep purple colour.

Where and when is it grown?

Historically it has been grown widely in the Mediterranean regions, but actually originates in Asia.

With modern growing techniques, it is now grown in North Europe from April until October, with year round supplies available from the Mediterranean.

How is it grown and harvested?

Plants are grown in green houses to protect them from the wind or cold.

Supported by string, plants can grow as high as ten feet.

Aubergines are cut by hand from the plant over a six month period.

Enjoying Aubergines

Aubergine can be stuffed, fried, grilled or roasted.

Try halving the aubergine and filling with slices of tomato, onion, garlic and mozzarella cheese, then bake for 45 minutes.

A good tip is to soak them in lightly salted water with added vinegar or lemon juice. This will soften and flavour before placing in casseroles or pasta dishes.
