Enjoying Squashes

A colourful and nutritious vegetable, it tastes superb as a side dish or the main part of the meal.

Steaming is the best way to preserve the vitamins, although arguably the best taste comes when roasting or baking.

Chunks of squash can be baked or added to stews.

The butternut has a softer skin, making it easier to cut up.

For easy removal of skin, try part cooking before peeling and cutting.
