Marrows

 Marrow

Marrows have been a traditional vegetable in the UK for many years. The seasons are almost identical to Courgettes; however production is generally limited to England and Spain. The Marrow is the mature form of the Courgette and as such the skin is hard and is generally not eaten. The traditional way for cooking Marrows is to stuff them, either with meat, vegetables or rice and bake them. Marrows can also be peeled and fried or peeled and coated in bread crumbs before frying. Marrows can also be combined with goat's cheese and peppers to make vegetable cakes.
