Method
Peel, deseed and cut the squash into a small dice. Heat 2tbsps. Olive oil. Add the squash, 1 chopped medium onion and cook over a medium heat for 5 minutes-this will develop the sweetness of the squash. Add 2 cloves of finely sliced garlic and cook for a further 2 minutes. Add 400g can chopped tomatoes, salt and freshly ground black pepper, cover with a lid and simmer gently until the squash is tender. While you are waiting cook 250g penne or pasta of your choice, drain well. Add the sauce to the pasta, add 25-50g freshly grated Parmesan, 100g baby spinach leaves and mix well. For a special touch add a drizzle of good olive oil at the end. |
