Rhubarb Squares
Dough:
¾ cup butter
¼ cup brown sugar
1 ½ cup flour
Rhubarb mix:
4 cups peeled and chopped rhubarb
1 ½ cup brown sugar
3 eggs, beaten
3 tbsp flour
¼ tsp salt
¼ cup milk
¼ cup melted butter
Warm up the oven to 375 degrees F.
In a mixing bowl, beat the butter until creamy. Add brown sugar and flour. Press the dough flat on the bottom and sides of an 8-inch-side greased cake tin.
In a saucepan, cook the rhubarb for 15 minutes with the sugar, over medium heat.
Leave to cool.
In a bowl, mix the eggs, flour, salt, milk, melted butter and cooked rhubarb.
Pour into the dish and bake for 45 minutes. Leave to cool completely before cutting into squares |
