Sweet Potato Jam
Serves 6
1 kg sweet potato
1 kg caster sugar or brown sugar
1 tsp cinnamon
1 tsp bitter almond extract
1 tbsp vanilla sugar
50 cl water
lemon juice
Peel and chop the sweet potatoes, toss them in lemon juice so they don't brown.
In a large saucepan, bring the water to the boil, add the sugar, almond extract, cinnamon and vanilla sugar. As soon as the water starts boiling, add the diced sweet potato and cook for approx. 30 minutes. Check regularly and do not let the water boil dry, also check the potatoes, they must begin to melt down but not turn into puree.
Serve with muffins, scones or in a sponge cake. |
