Baby Gem Bake

Bake Me!

Serves 4

Cooking time: 35-40 minutes

Heat an oven to 180 ° C/ 375 ° F/ Gas Mark 5. Heat a Tsp. of vegetable oil in a saucepan and add 65g diced pancetta and fry for 2 minutes. Add 4 chopped chestnut mushrooms, 2 sprigs of rosemary and salt & pepper and cook for a further 2 minutes. Slice off the tops of 2 baby gem squash and scoop out the seeds, season with salt and freshly ground black pepper. Divide the mix between the squash and top with generous amounts of cheddar cheese. Place in a baking dish, cover with tin foil and bake in the oven for 35-40 minutes.
