Stuffed Sweet Potatoes
Serves 5
5 large sweet potatoes
½ tsp or 2 ml nutmeg
¼ tsp or 1 ml ground cloves
2 tbsp or 25 ml brown sugar
¼ cup or 50 ml butter or margarine
½ cup or 125 ml EACH of chopped nuts, chopped apples and raisins
Trim ends off sweet potatoes. Prick with fork and microwave at high for 10 - 12 minutes. Alternately, bake in conventional oven at 375 degrees F (180 degrees C) for 1 hour or until tender. Remove and wrap in aluminium foil; let stand 5 minutes. Remove foil and cool slightly.
Remove top quarter of each sweet potato and scoop out pulp (reserve skins). Place pulp in large mixing bowl; mash with spices, sugar and butter. Stir in nuts, apples and raisins. Gently place sweet potato mixture into skins. Bake at 350 degrees F (180 degrees C) in a conventional oven for 15 minutes. |
