Broad Bean and Tomato Salad

Serves 4

400g fresh (shelled) broad beans

2 tomatoes

100g olives

Dressing:

4 tbsp olive oil

1 tbsp vinegar

salt & pepper

1 clove garlic (chopped)

2 tbsp chopped chives

  1. Boil the beans in salted water for 30 minutes. Drain and cool.
  2. Prepare the dressing.
  3. Arrange the beans and the sliced tomatoes on a serving platter, drizzle with dressing.
