Cod Fillets with Broad Beans
Serves 6, Cooking time 30 minutes
600g salted cod
1 litre milk
2 kg fresh broad beans
100g butter
25 very small onions
1 stick of celery
5 carrots
2 cloves of garlic
1 bouquet garni
salt and pepper
- Start soaking the cod 18 to 24 hours ahead, change the water every 6 hours if you can.
- Peel the carrots and slice them.
- Peel the onions.
- Shell the broad beans.
- Peel and finely chop the garlic.
- In a saucepan, put the milk, beans, carrots, onions, garlic, celery, and bouquet garni. Bring to the boil, then simmer for 30 minutes.
- Drain the fish and shallow-fry them lightly. Lay them out in a shallow oven-proof dish. Add the butter to the beans and stir to coat them. Take out the bouquet garni and the celery. Spread out the beans over the fsh and bake at 220 degrees C for 30 minutes.
