Serves 2
125g tortellini - any filling
salt
a onion finely chopped
1 small (approx 200g) courgette, sliced
1 tbsp butter or margarine
½ tsp marjoram
75 g of a hard cheese, if available with garden herbs added (though no garlic or other strong flavours)
125 g crème fraiche
1 clove garlic, minced
pepper to taste
Cook the tortellini according to pack instructions.
Meanwhile, prepare onions and courgettes.
Melt butter in frying pan, sauté the onions until soft, about 3 minutes.
Add courgette and marjoram and sauté 5 minutes, stirring.
Grate the cheese into a bowl. Stir in the crème fraiche, pepper and garlic.
Add the cheese mixture to the courgette.
Cook over low heat, stirring occasionally, about 5 minutes until warmed through.
Drain the tortellini and add to the courgette mixture.
Can be served with tomato salad. |
