Sweetcorn Chowder

250 ml potatoes, diced

250 ml sweetcorn kernels

3 slices of bacon, diced

1 onion, copped,

375 ml milk

parsley, salt and pepper

Boil the potatoes in 250 ml salted water (15 minutes).

Fry the bacon, add the onion. Fry until the onion is cooked and the bacon is crispy.

Add the bacon and onion into the potato saucepan, add the sweetcorn and milk, and season.

Serve hot with a pinch a parsley for colour !

OR:

Boil and drain the potatoes.

Using a blender, whizz the potatoes, 500 ml of milk and half the sweetcorn.

Pour into a saucepan, add the onion and bacon, the other half of the sweetcorn, and a little milk if necessary. Season, add a knob of butter and serve.
