Stuffed Courgettes

Serves 2

2 good sized courgettes

2 eggs

1 slice brown bread, crumbled

¼ lb grated cheese

1 tbsp olive oil

1 tbsp butter

¼ tsp garlic salt

salt and pepper

Slice courgettes in half lengthwise and cook in boiling salted water for 4 to 10 minutes. Drain in colander and cool.

Scoop out insides of courgettes and place in a bowl. Add eggs, brown bread, cheese, garlic salt, salt and pepper. Mix well and put back into courgette cases.

Heat olive oil and butter in frying pan and fry courgettes for about 5 minutes. Turn and brown the other side. Serve immediately either as appetiser or with cold meat and new potatoes.
