Gingered Acorn Squash

Ginger Me!

Serves: 4

Dice 500g acorn flesh into 2 cm cubes. Peel and grate 35g ginger root. Heat 3tbsp. Olive oil, fry ginger root and add squash. Fry 8-10 minutes, until squash is crisp and brown, and soft in the centre. Add 1tsp. caraway seeds, 1tbsp. honey, and seasoning. Garnish with spring onion tops.
